Ingredients:

For the peanut sauce:

¾ cup canned coconut milk (shaken in the can before measuring)

¼ cup maple syrup

2 tablespoons soy sauce

Juice of ½ lime

1 tablespoon seasoned rice vinegar

1 tablespoon toasted sesame oil

½ cup creamy peanut butter

1 tablespoon chili garlic sauce

½ teaspoon ginger powder

½ teaspoon garlic powder

¼ teaspoon salt

For the cauliflower:

¼ cup dark brown sugar

1 tablespoon chili garlic sauce

1 tablespoon maple syrup

1 tablespoon toasted sesame oil

2 tablespoons soy sauce

¼ teaspoon ginger powder

½ cup panko bread crumbs

¼ cup yellow stone-ground cornmeal

2 tablespoons white sesame seeds, plus more for sprinkling

4 cups cauliflower, cut into small bite-size florets

Cooking spray

2 scallions, thinly sliced

Ingredients:

2 bananas, cut into 4 chunks, frozen

¼ cup oat milk

¼ teaspoon vanilla extract

¼ cup chocolate chips

Ingredients:

1 (16-ounce) block super-firm tofu

For the batter:

⅔ cup flour

⅔ cup vegan milk

For the breading:

½ cup flour

1 tablespoon garlic powder

1 tablespoon onion powder

1 tablespoon paprika

1 teaspoon chili powder

¼ teaspoon salt

¼ teaspoon black pepper

1½ cups canola or vegetable oil, for frying

Black pepper, for garnish

Sliced green onions, for garnish

Makes 4 easy servings. This is the perfect New Year’s dish for guests who enjoy eating chicken pops. Tofu makes a good alternative for chicken meat; in fact, guests won’t be able to tell the difference!
